Polentas are a special venezuelan dish made with corn flour together with any kind of meat and vegetables. Some are called "funches" in the occidental regions of the country. I like the one made with coconut milk, vegetables and cheese. They can be cut in pieces to take to a picnic because they can be eaten cold. I am going to prepare one with meat. if you don't have corn flour you can use semolina because it gives the same result.
Ingredients:
- 1 and 1/2 litre of water
- 2 cups of corn flour, it can be white or yellow
- 1/4 kilo of minced meat together with 1/4 kilo of minced pork without fat (lean)
- enough butter
- 8 chilles
- 1 red pepper
- 2 bunches of chives
- 2 tablespoon of thyme
- 2 cloves of garlic
- 1 cup of cooking red wine
Procedure:
- cut all the ingredients, add the thyme and mix before using
- place the meat and the pork in a pan and fry with 2 tablespoons of oil
- add the vegetables and the wine
- adjust the salt at taste
- cook for ten minutes before adding the water and the flour
- add the water and boil for 5 minutes
- put off the fire
- add about 4 tablespoons of butter and start incorporating the flour moving all the time
- once the flour is all incorporated, put it back on the fire and don't stop moving
- it will take some time to cook, and may be you will need to add more butter to smooth the mixture
- be careful with the bubbles because they jump out of the pan, but it is the sign that tells you that the polenta is ready. I cook it for about 15 minutes moving it all the time
- passed this time serve in the container you prefer. You have to serve it very hot so that you can give shape to it using a spoon wet in water
- let it cool before cutting
