The easiest stuffed green peppers you will ever make.
I'm always on the hunt for easy and healthy meals, and this recipe fit the bill! Stuffed green peppers are quick to make and have tons of options for versatility in regards to the ingredients. It allows you to get creative and play around with different spices. The fact that the prep time only 20 minutes makes this meal one of my new favorites.
Ingredients
5 green bell peppers | 2 cup cooked rice (brown or white) |
1 cup shredded mozzarella cheese | 1 lb ground beef (or ground turkey) |
15 oz can tomato sauce | 1/2 tsp garlic powder |
1/2 tsp salt | 1/2 tsp onion powder |
1/2 tsp italian seasoning |
Directions
Begin by cutting the tops off of all the peppers and remove all the seeds.
Then, cook the rice according to brand directions. Brown the ground beef. I personally like to keep the juice and not drain the meat after it's done cooking, but that's personal preference. Drain or not to drain, the choice is yours.
Next, in a large mixing bowl, combine the rice, ground beef, cheese, tomato sauce and spices. Mix well.
The last steep is to stuff the mixture into all of the peppers. Make sure to fill them all the way to the top.
Finally, put the peppers into the crock pot and cook on low for 5-7 hours. Or on high for 2-3 hours. The peppers will darken in color and become very soft. Top the peppers with more cheese and enjoy!
