A light meal with 2 serving options:
Vegetarian Briyani or Briyani with smoked Kieler sprats
Ingredients (4 servings):
2 cups Briyani rice
1 large diced tomato
1/2 cup cashew nuts
1/2 cup sweet raisins
2 tbsp salted butter
1/2 tsp salt
1/2 cup fresh coriander
1 can smoked Kieler sprats
1 sprig curry leaves
100 ml Briyani sauce
Method:
I. Cook the Briyani rice as usual then fluff it up and set aside
II. Sauté the diced tomato with butter & raisins for 2 minutes in low heat then add in 100 ml of the Briyani sauce and mix well
III. Add in the cooked Briyani rice, mix well and season with salt
IV. Add in cashew nuts and fresh coriander leaves, mix well & turn off heat
V. Serve as vegetarian Briyani rice
Or...
VI. Pan fry the smoked Kieler sprats in a seperate pan with its oil and curry leaves for about 3 minutes in low heat then drain away the excess oil and serve on top of Briyani rice
