Hi guys! I'm trying out a new idea today.
I've got a light, delicious chickpea dish cooked with spicy XO sauce (seafood sauce)!
Ingredients (4 servings) :
1 can of chickpeas
3 tbsp of dried shredded scallop in XO sauce (Lee Kum Kee or any other brand will do too)
1 onion
1 cup chopped scallion
3 tbsp oil
1 tbsp light soy sauce
1 tbsp Peri Peri chilli sauce
Method:
Stir fry the onion with oil for 1 minute then add the can of chickpeas and mix well
Add in the dried shredded scallops and XO sauce, light soy sauce and Peri Peri chilli sauce. Mix well
Add in the scallions and stir well for half a minute then turn off the heat. Serve hot
Done!
Such a simple and easy dish. :)
