40g of softened butter
1 tbs plain flour
half cup of milk (125ml)
⅓ cup of coarsely grated swiss cheese (40g)
⅓ cup of coarsely grated vintage cheddar (40g)
4 thick slices of sourdough bread
1 tsp of mustard (dijon)
150g of shaved ham
Heat up the saucepan over medium temperature to melt 1/2 the butter. Put in the flour cook & stirring until mixture is slightly grainy (about 1 minutes). Add milk after removing from stove. Whisk it properly with a balloon whisk until mixed together. Revert the pan back to heat. Cook & stirring until sauce boils & thickens (about 2 minutes). Away from the stove. Add 1/2 the swiss cheese & 1/2 cheddar. Stir until the mixture & cheese melts is mixed together. Season to taste.
Heat up the chargrill with medium temperature. Spread with butter on bread evenly. Toast the bread on the grill until lightly toasted underneath (about 1 minutes). Move toasted-side up, to a clean surface. Spread mustard on 1/2 the bread. Top with ham after putting cheese sauce. Sprinkle with remaining swiss cheese & cheddar. Top with remaining bread, toasted-side down.
On the grill, cook the sandwich each side until the bread is golden brown in color after approximately 2-3 minutes & the filling is heated through. Finally you may cut it in half and ready to serve.

@leilys ahh... yes of course nothing beats chargrilled cheese. though i dont have a chargrill😭😭😭
