Hello.
I was given a huge zucchini (courgette) and I made it into 'zoodles' with a 'spiralizer'.
Then I did this:
Fried some sliced onion and mushroom, and chopped garlic. Plus Italian Tofurky® sausages in another pan
Added some diced tomatoes
Added a good glug of wine. We had aged this for far too long and it was vinegary, so good for cooking.
Napoleon's own tomato paste!
Thyme and oregano
A can of basic olives
Chop those sausages and bang them in
Grill (or 'broil' as Americans say for some reason. What a horrible word—like 'boil a gritty liquid') the zoodles
A lot of freshly ground black pepper
Then I went mad and added the entire bottle of wine
So I needed more tomatoiness
Very thin right now so time to reduce a little

This was highly delicious! The wine made it a little bitter so perhaps a small amount of sugar would be in order for the leftovers. This sort of thing is usually better the next day, so we shall see tonight.We shall see.
