Thought I would share one of my dinner recipes, seeing as I cooked it tonight. Moreover, it's a fantastic dish which is extremely tasty and inexpensive, and anyone can make this, I should know because I'm no chef. That being said, I always get great feedback on this dish, my hubby loves it and my two sons can't get enough of it. It's a little spicy but not too hot, tons of taste with lots of flavors that are rich, and it stays with you for a while after you finish, it's just perfect.
First of all I cooked 3 pieces of boneless chicken breast in the oven, which I purchased for $3.25 from our local County Market store. I know it said to cook uncovered at 350 for about 20 minutes, but I cooked mine for about an hour covered, and I also added some olive oil and sprinkled some rosemary and garlic over the chicken. I cooked this the night before, then today I cut up the cooked chicken breast in small bite sized pieces and put it all in the frying pan (or skillet) with some chopped up colored peppers (red,green,orange, and yellow) as well as a couple of cloves of garlic.
While this is all frying on a medium heat I put the Jambalaya rice on, as this takes about 30 minutes. Jambalaya rice is a wonderful spicy rice but not too hot. In addition, I also wanted to mention not to let this rice dry out as it doesn't taste very nice then. Next, I cook it on a simmer once it's boiled with a lid on it until it's almost dry but still moist, stirring occasionally while simmering. I purchase the Jambalaya rice from our local Aldi store for about $1 which is well worth the price.
After about 10 minutes I add into the chicken the Tikka Masala sauce, which I also purchase from the local Aldi store for about $2. This is a fantastic rich tasting sauce, and when you mix it in with the chicken and peppers, you let it simmer for about 20 minutes to allow the full flavor of the sauce to penetrate the chicken, by which time the rice should be done too. Preparing the chicken the night before makes this meal a breeze, just about 30 minutes from start to finish.
As stated in the title this meal easily feeds four adults, and for under $10 you get a classy tasting meal that would probably cost you at least that per person in a restaurant. Moreover, purchasing a french stick from our local Ultra for about $1.25 was a great added extra on the side to wipe up any sauce left on the plate, just cut into four inch lengths and put some butter on it, so yummy.
This is such a tasty meal it's definitely comfort food, it makes you feel all warm inside, you just simply enjoy every mouthful. If you want to make the meal look great you can make a circle with the rice on the plates, then spoon the chicken and curry sauce into the middle, then comes the most important thing with this meal, tuck in and enjoy!
I would like to mention that the sauce and rice may contain soy and dairy in its ingredients and may have also been prepared in a place that also prepares or uses nuts, so if you are allergic to any of these, this recipe will not be for you.
