To prepare profiteroles, mix 60 grams of milk, salt, 5 g of sugar and 30 g of butter in a saucepan, bring to a boil. Add 40 g of flour and knead thick dough, without removing from the stove.
Break the chicken egg and whisk it lightly. Transfer the dough into a mixer, add half of the beaten egg and whisk at a first speed until smooth. Transfer the mass into a confectionery bag with a setting of 3.5 cm.
To make orange grind, mix 20 g of butter, 20 g of flour, 20 g of sugar and 5 g of orange peel, mix with a spatula until uniform. Then the resulting dough roll between two sheets of parchment as thin as possible. Clean into the freezer until it freezes.
On a baking sheet, lay a sheet of parchment paper so that the baking does not burn. Squeeze out small pieces at a distance of 3 cm from each other on a baking tray.
Remove the frozen croquet and cut out circles of the same size as the profiteroles deposited on the baking sheet. At the top of each profiterole lay a circle of crumbles. Profitrols take in the freezer to full freezing (about 1 hour).
Preheat the oven to 180 degrees. Bake profiteroles at a temperature of 180 degrees for 10 minutes, then reduce the temperature to 140 degrees and continue baking for another 12 minutes. Do not open the oven during baking! Put the profiteroles on a grate and allow to cool.
For the preparation of almond cream, carefully beat the soft butter - 30 g. Add 30 g of sugar and almond flour, whisk repeatedly.
Half the beaten egg add to the mass and mix until homogeneous. Put the cream in the refrigerator for 30 minutes.
Finished profiteroles fill the cream with a confectionery bag.
Melt 100 g of bitter chocolate in a water bath. Pour into the sauce bowl. Strawberry rinse, remove the stem and leaves, cut randomly.
To serve the dessert, take a square plate and divide it into 4 zones using cocoa powder on one zone of the dish, lay a vanilla filling ball, another profiteroles with cream, on the third zone strawberries, on the fourth - hot chocolate. Decorate with a sprig of mint. Bon Appetit!
