Gulp! I just swallowed my baby SCOBY while reading your article and drinking a bottle of my homemade "booch". Great how-to article. I got started making kombucha with a bottle from the store. I don't second ferment since I don't really like fizzy drinks much and besides, I'm not really prepared to risk an explosion because I tend to forget about things sometimes.

Hahaha!! Down the hatch! Good idea on skipping the second ferment since you don't like fizz :) For me, the more fizz the better! I haven't thought about a potential for explosion! Eek!
