Guacamole

Today I bring you a recipe that is super fast and easy to make, it is nothing more and nothing less than a homemade guacamole and nachos, perfect as a steak, stuffed quesadillas, or simply as a companion for the nachos. The perfect Mexican garnish for your summer dishes.
Guacamole
Mexican food has always been characterized by the use of a large number of natural ingredients and also by using a lot of spice in practically all gastronomic elaborations.
This time I want to share with you an original recipe of guacamole, so you can surprise your friends, family, etc.
For its preparation you will need the following ingredients:
Guacamole**
1 medium ripe avocado.
1 medium onion
The juice of a freshly squeezed lemon.
pepper
sweet Aji
Spicy Aji.
Fresh chopped cilantro.
A little salt (at your discretion)
Nachos:
Corn flour (not pre-stitched)
Method of making guacamole
The first step is to grab the avocados, make a deep cut around their perimeter and be able to separate their two halves without any problem. We will remove the bone and we will remove the pulp with a spoon, which we will deposit in a deep dish.
When we have removed all the pulp we can crush it all with a fork until leaving it with a creamy mass, but with a certain consistency, as if it were a puree.
Once crushed, add the freshly squeezed lemon juice to prevent the avocado from rusting and getting a dark color.
On the other hand, peel the onion and chop half in very thin pieces, something we can do or with a very sharp knife. The onion we have chopped will be incorporated into the avocado we have in the already crushed dish.
Chop the paprika, aji dulce and aji picante very fine, trying to remove the seeds if you do not want too much, add it to the rest of the ingredients with a pinch of salt and some freshly chopped fresh coriander leaves.
With the fork, we will remove all the ingredients so that little by little all the ingredients are mixed and finding the balance between them.
Now it will be ready to consume with any of the elaborations of Mexican cuisine that we have made, from simple nachos to a plate of chicken or spicy meat. I personally accompany him with some nachos cacero.
Elaboration of Nachos:
The corn is cooked and ground, then the flour is kneaded with little water and salt. Then form a small ball and spread with the palm of the hand until the dough is thin, finally cook over low heat until it is toasted.
