Spicy Sweet Potato Curry
Ingredients
- Olive oil
- Cumin seeds
- Cashew pieces
- Salt
- Tumeric
- Garlic crushed
- Gram flour
- Ground cumin
- Sweet potato
- Green onions
- Tomatoes
- Spicy chilies of choice
- Ginger
Instructions
Start by peeling and slicing the sweet potatoes into small 1" x 1" cubes or so. Put them in a pot of salted, boiling water for around 15 minutes or so get them nice and tender.
While you're boiling those sweet potatoes up put some oil in a pan and throw that bad boy on a medium burner. Once the oil is shimmering a bit throw in a generous helping of cumin seeds. Wait for those seeds to start popping and avoid burning them.
Drain the sweet potatoes and put aside.
Dice up the green onions and add to the cumin. Cook for about 5 minutes or so.
While the green onions are going I'd recommend chopping up the onion and dicing up about a 1" by 1" slice of ginger. Once the green onions are done throw in pretty much all the rest of the ingredients except for the gram flour and sweet potatoes. Put some good rice on at this stage. We love basmati. Jasmin is good too.
As far as seasonings go, I put in around 1tsp of mostly everything. But, at this stage, it's good to experiment with flavours to see what you like. Same thing with the chillies. Go easy for a mild spice or heavy for a living dangerously approach :)
You'll want to cook this part for about 5-8 minutes watching to make sure it doesn't burn and that it turns into a nice looking sauce.
Add the sweet potatoes and stir really well. Add about 1/2 a cup of water and then 1-2 tsp of the gram flour and mix very well.
Cook for about 5 minutes or so. Serve the curry on top of the rice with a poppadom if it takes your fancy!
