Here’s a gem of a healthyish cookie recipe .... Divine Peanut Butter Cacao Cookies
I love these because they embody a perfect balance of a mild sweet with a salty finish. I enjoy using the Maldon Smoked Salt to add another dimension of flavor. They are flourless and gluten free, good for gluten-free people who are allergic to almonds, because so many gluten free cookies call for almond flour! Also I find the coconut sugar is much easier on my system and doesn't make me feel weird and rushy like cane sugar.
Another big plus is they are super easy, requiring only one-bowl!
- 1 large egg
- 3/4 cup coconut sugar
- 1 teaspoon baking soda
- 1 cup creamy unsweetened organic peanut butter
- 1/2 teaspoon pure vanilla extract
- 1/2 super dark high quality chocolate bar, chopped (I like AlterEco 80%)
- Maldon sea salt
Mix coconut sugar, baking soda, egg, vanilla, with an electric mixer.
Add peanut butter, mix again.
Scoop, roll into ball, flatten with fork, and top with chocolate chunk + a pinch of Maldon salt.
Bake at 350 for 10 minutes on baking sheet lined with parchment paper.
Cool on a rack.
Eat!
