Today I want to share with you a #KETO appetizer. Bell pepper soup with a bite. I 💖 bell peppers and I 💖 soup so this a great way to have both.
Ingredients
- 2 onions
- 1 tbs coconut oil
- 4 garlic gloves
- 4 bell peppers
- 1 liter chicken stock
- 1 red pepper
- 1 ts vinegar
- a handfull basil leaves
- 100 mililiter cream
- a pinch of salt

Method
Peel and slice the onions.
Wash the bell peppers and slice them as well.
Peel and slice the garlic and red pepper, (when you don't want your soup to get very spicey remove the seeds.) I like it spicey so I add every single seed 😊
Add the coconut oil into a soup pan heat it up and fry the red pepper, onion, garlic and bell pepper on medium heat until the onions are a bit translucent.
Add the 1 liter chicken stock and let it boil for about 10 minutes at medium/low heat with the lid on.
Add the vinegar and puree the soup with a hand blender.
sorry it's a big foggy because of the heat.
For the final touch, add the sliced basil leaves.
