Super easy Vegan supergrain stir-fry!

I've been a vegetarian for almost 2 years now, and it can be tricky at first to think of easy to make meals and not resort to cheese on toast for every meal.

Luckily we have so many options available to us these days that it's simple to throw together a filling and delicious meal using basic ingredients.

Today I'll show you how to make a nutritious and tasty stir-fry using inexpensive ingredients you may already have in your cupboard.

This is just a guideline, you can substitute any of the vegetables I have used . I ate this all myself but it could easily make a light meal or side dish for 2 people.

Ok, let's begin!

Ingredients:

1tsp coconut oil
1-2 cloves of garlic
1 tbs soy sauce
2 handfuls of kale
2 courgettes
4-5 florettes of broccoli
10 cherry tomatoes
1/2 tin of chickpeas
220g pouch of pre cooked whole grain rice & quinoa

Optional ingredients:

Small handful of cashew nuts
1 tbs nutritional yeast

Wash and cut the vegetables while heating the coconut oil in a wok or large frying pan on a medium heat.

Once the oil is hot, add the broccoli, kale, courgette, chickpeas and the crushed garlic.

Fry until the courgettes start to brown.

Then add the pouch of rice and quinoa, the tomatoes and soy sauce.

Cook for a further 5-6 minutes then serve.

I added some raw cashews and nutritional yeast before serving for some added protein and vitamin B12.

So there we have it, a super quick, healthy and delicious meal, perfect for a simple dinner.

Tasty! I also has a fair amount of B12 too. I had some test recently and it appears that my B12 is three times lower than the lowest it should be! I cannot understand how it has dropped down so low. I have since been eating everything under the sun that has b12 in it :)

Yeah I probably need to have a test for that too, not sure I'm getting enough B12! Are you vegetarian or vegan? What are you eating to get your levels back up?
