Thanks for your question @loveself! There is no way of knowing for sure if the food is cooked. I usually just use the same cooking times as if I am just roasting the food without the salt crust. So, a whole striped sea bass weighing 4 pounds takes about 45 minutes and the beets take 90 minutes.
