Strawberry Loaf Cake

Strawberries are one of my favorite fruits to use in baking and for eating. This strawberry loaf cake is sweet and tart, perfect for tea time or you can serve it with whipped cream and berries as a dessert. Fresh and freeze dried strawberries are used to flavor this cake. The freeze dried strawberries also add a beautiful hue to this incredibly simple but flavorful cake. It's finished with an elderflower syrup glaze, but a simple lemon or strawberry glaze will also work. Elderflower has a subtle floral note which works really well with strawberries and it adds a touch of tanginess to balance the sweetness from the confectioner's sugar.

Strawberry Loaf Cake

  • 1 1/2 cups All purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/3 cup freeze dried strawberries, pulverized
  • 1 cup sugar
  • 1 cup whole milk greek style strawberry yoghurt or plain greek style yoghurt
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup vegetable oil
  • 1/3 cup strawberry puree

To make the strawberry puree, take a generous 1/2 cup of cut strawberries and place in a blender and blend until smooth. If the puree is short of 1/3 cup, add milk or water to make up 1/3 cup. Set aside. In a large mixing bowl, combine all the dry ingredients together. In a medium sized bowl, combine the eggs, yoghurt, vanilla extract, oil and strawberry puree.

Add the wet ingredients into the flour mixture and whisk until ingredients are incorporated. Pour into a parchment paper lined 8.5 x 4.25 x 2.5 loaf pan. Bake in 350F oven for 30-40 minutes or until a toothpick inserted into the center of the cake comes out clean.

Place on a baking rack and cool completely.

Elderflower glaze

  • 1 cup confectioner's sugar
  • 2 tbsp Elderflower syrup, lemon juice, or strawberry puree

Whisk all the ingredients together and pour over the cooled cake. Happy Spring!

The strawberry puree turns the cake pink and really adds to the strawberry feel. I also like the strawberry in the icing! It looks like the fancy cakes they sell in cafes but this one is home made! Thanks for sharing

Beautiful! I love the color in already baked cake. How would you rate the cake’s sweetness level?
I usually reduce the amount of sugar in recipes since I find them overly sweet.

Do you have a good recipe for a banana bread? I made one yesterday from a new recipe but it turned out to be a catastrophe:(

The cake was not overly sweet at all because the yoghurt, freeze dried strawberries and the strawberry puree added tartness to the batter. Yes, I do have recipe for banana bread. I will look through my computer and send it to you. Thank you @sweetsandbeyond.

Here's the Banana Bread recipe
171g unsalted butter
323g granulated sugar
3 large eggs
1 1/2 tsp vanilla extract
1 1/2 cups buttermilk
494g All purpose flour
1/2 tsp salt
3 tsp baking soda
1 1/2 tsp baking powder
500g banana mashed approx 5 medium bananas.
Cream the butter with the sugar and add in the eggs and vanilla extract. Stir in mashed bananas. Alternate the flour mixture with the buttermilk. Bake at 325 degree F for about 40 minutes. Sometimes I will add in nuts. Have a great day @sweetsandbeyond.

This looks delish! I'm always a fan of a loaf-style cake. Maybe it's the nostalgia of it, since most everyone in my family would have some sort of loaf for snacking on with tea, whenever company would come to visit.
Have you made this using fresh strawberries as well, or just the freeze-dried ones?

When I used just the strawberry puree in the cake, the color was a bit weak and the flavor was not as pronounced as I would like it. So I added the freeze dried strawberries and I really liked the end result. I'm not a fan of adding chunks of strawberries into a cake but if you try it I would love to know how it worked out for you. I really like your pink macaron with the pearl accent @offbeatbroad. They are visually stunning and I am sure they were delicious!

That makes sense, for sure... dried things always have much more concentrated flavor. I tend to find cooked strawberries kinda mushy for my taste, so I can see why you'd not be a fan. I'm pondering trying this, using a puree, but cooking it down to concentrate it, I guess sort of like a jam, or a coulis. If I decide to experiment, I'll be sure to tag you and let you know how it goes. 😁
