Hey there you "too tired to cook" sedentary person!
Too tired to cook after work? Don't have the ingredients to prepare a healthy and tasty meal? Too lazy to venture down to the supermarket and buy fresh local produce?
Bad news; diabetes and cholesterol and a fuck ton of other diseases will be coming for your ass sooner or later!
The good news: cooking healthy and tasty food is not that hard. You don't need fancy, impossible to find ingredients.
Let me show you how. Let's start with some tacos; everybody loves those right?
Cauliflower and Cashew Sauce Tacos
Serves 4
Total time spent in the kitchen: 25 minutes.
For the Cashew Sauce:
1/4 cup Cashews Nuts or 2 heaped tbsp of Cashew Butter
1 tbsp White Wine Vinegar
5 Spring Onions (trimmed)
Salt to taste
Some water
Taco Filling:
Whole Cauliflower
3 Tbsp Soy Sauce
2 Tbsp White Wine Vinegar
1inch (3cm) of Fresh Ginger, minced
3 to 5 cloves of Garlic, minced
1 Fresh Red Chili Pepper
1 Avocado
Corn Tortillas
Add the cashews or cashew butter to a blender, add the trimmed spring onion, white wine vinegar, and blend. Done!
Chop up the cauliflower into nice small bits (whatever size you find edible), mince the garlic and ginger and slice your chili pepper.
Fry the garlic, ginger and chili with 1 tbsp of sunflower oil in a frying pan. When the flavors release and the garlic looks crunchy, add the cauliflower, soy sauce, and white wine vinegar. Cook until you are happy with the bite. I prefer my cauliflower crunchy. Pronto!
Now pack that tortilla with the cauliflower, add 1/4 of an avocado and 2 to 3 tsp of the cashew paste.
