Omelettes are great not just for breakfast, but any time of the day! They are easy and quick to make containing eggs, vegetables, cheese, and meat. Eggs contain all sorts of vitamins and minerals making omelettes a healthy meal.
This morning I made a two egg omelette with broccoli, tomato, onion, ham, cheddar cheese, and feta cheese. I had light sour cream and mild taco sauce on the side.
Make sure to steam vegetables in a skillet before adding them to the omelette. Otherwise, they won't be soft. After adding all ingredients to half of the omelette, fold in half and let the cheese continue melting. Once the cheese has melted, add salt and pepper to taste and enjoy!
