INGREDIENTS:
(makes about 8 large pancakes)
2 chia eggs (see “Simple Staples”)
1 tsp vanilla
2 Tbsp. maple syrup
1.5 cups plant milk of your choice
1 tsp apple cider vinegar
1 Tbsp. baking powder
1/2 tsp baking soda
pinch of salt
1 ½ cups all-purpose flour (use a gluten-free flour blend to make recipe GF)
BLUEBERRY LEMON :
Blueberry chia jam (see “Simple Staples”)
1/2 cup blueberries
2 Tbsp. lemon juice
1 Tbsp. maple syrup
Lemon zest
1/2 cup blueberries
CHOCOLATE CHIP PEANUT BUTTER:
1/4 cup chocolate chips
1 Tbsp. peanut butter
Top with extra chocolate chips and peanut butter drizzle
- Make chia eggs (mix chia seeds & water), then set aside
- In a separate bowl, add your plant milk and apple cider vinegar and mix. Then add the vanilla and maple syrup.
- In a large mixing bowl add the flour, baking powder, baking soda, pinch of salt, and mix. Add the wet ingredients to the dry, then mix in the chia egg.
- Heat a non-stick pan over medium heat. Pour or scoop batter into the pan (using about 1 large ladle full per each pancake). Add other ingredients such as lemon zest and blueberries, or chocolate chips.
- Allow the first side to cook for about 5 minutes or until the edge of the pancake is dry, and the top is covered in bubbles. Flip and cook for another minute or so.
- Top with your choice of toppings!
This recipe is super versatile and you can really get creative with the flavors of pancakes!
Tip: throw these in a freezer bag or airtight container with parchment paper in between each pancake. Whenever you want some pancakes, just take them out and pop them in the toaster! Voila!

You're a pretty awesome chef! Maybe you should open up a vegan restaurant. I definitely would have eaten those blueberry pancakes. I would want butter and maple syrup on them though but the homemade blueberry jam did look super amazing. It seems like cocoa butter might have worked ok with the chocolate pancakes. I think there are some vegan butters on the market. I'm a huge fan of butter. lol

Will go for decadent and “naughty” with chocolate chip peanut butter any day. These pancakes should be good also with buckwheat flour which I just bought. Curious to try it.
