Fish Rolade Recipes
Fish fillet meat is equally delicious lho processed so fish rolade. The look was really interesting & tempting. That is a white blend of fish dough, decorated with small carrot dice, and wrapped in skin from a yellow colored dumplings. Served in a soup, fried, or smothered with savory sauce was equally delicious!
Ingredients
Skin:
Egg - 4 eggs
Wheat flour - 2 tbsp
Water - 3 tbsp
Salt - 1/4 tsp
Rolade:
Mackerel fish meat - 400 grams
Sago flour - 150 grams
Ice cubes - 100 grams
Carrot, diced small - 100 grams
Onion, chopped - 1/2 fruit
Garlic, puree - 3 cloves
Egg white - 1 grain
Salt - 1 tsp
Sugar - 1 tsp
Pepper powder - 1/2 tsp
Aluminum foil or plastic wrap - to taste
Right amount of oil
Rolade Sauce:
Garlic, chopped - 2 cloves
Onion, sliced - 1 piece
Peas - 50 grams
Tomato sauce - 6 tbsp
Chili sauce - 4 tbsp
Oyster Sauce - 1 tbsp
Salt - 1/2 tsp
Sugar - 1 tsp
Pepper powder - 1/4 tsp
Maize flour, dissolve a little water - 1 tbsp
Water - 200 ml
Oil, for sauteing - to taste
Step how to make leather rolade
In the container, mix all the ingredients and mix well.
Heat a flat pan or Teflon ± 28 cm in diameter. Pour a little dough and make a pancake until cooked. Lift and drain.
Repeat make the omelette until all the dough runs out. Set aside.
How to Make a Rolade
Blend the mackerel fish in a blender / food processor with ice cubes and salt.
In the container, mix the fish dough with garlic, egg whites, sugar, and pepper powder. Stir well.
Add sago flour, carrots, and onions. Stir well.
Take 1 sheet of leather rolade. Pour the fish dough to taste and flatten the whole surface of the pancake. Roll the rolade slowly while solidified, then wrap the rolade with plastic wrap or aluminum foil. Repeat until the dough runs out.
Heat the steam / dust pan. Steam the rolade for 45 minutes until done. Lift and chill.
Fry the rolade briefly until the outside is brownish yellow. Remove and drain, then cut into 1 cm thick pieces.
Tips
Fish dough can be combined with shrimp.Rolade sauce can also dikreasikan with black pepper sauce.
