Potatoes with sautéed mushrooms

Hello, steemians! Hope you’re great.
I’m gonna share a really really easy and delicious recipe.
It's perfect for those who cook NOTHING hahaha

Let me tell you something, last week I had many days as vegetarian, I was eating a lot of red meat and it wasn't good for my colon.
I bought fruits and vegetables for those days and I'm gonna share my recipes with you. They turned out really good for my body.

Potatoes with sautéed mushrooms

I think my photo doesn't look as delicious as the dish really is. This recipe contains all the necessary nutrients for a good lunch or dinner, just take in count that if you're on a weight loss diet you should control the amount of potatoes, specially at night.

** Total calories ** 340 Kcal
** Proteins ** 13gr
** Carbohydrates ** 48gr
** Healthy fat ** 35gr

If you want to add more protein add 30gr of sliced almonds, the proteins would grow to 17gr and the total calories would be 530 Kcal.

Ingredients:

  • 150gr of potatoes (I always prefer the Colombian potatoes that are really tiny)
  • 2 medium tomatoes or 10 cherry tomatoes
  • 70gr of arugula
  • 150gr of spinach
  • 5 or 6 leaves of fresh basil
  • 150gr of mushrooms
  • 4 cloves of garlic
  • 1 tbsp Of olive oil

Instructions:

  1. Wash all the ingredients well. If you use Colombian potatoes take special care to remove all the sand with the help of a cloth. In case of mushrooms, it's ideal to wash them in a bowl with a few drops of lemon and cut the part of the stem that was in contact with the ground.

  1. Place potatoes in a pot with water and place it over high heat, salt water generously, time will depend on the size of them. If you use Colombian potatoes, they will usually be ready in 10 to 15 minutes, constantly check them so they don't open.
  2. Cut the tomato into large squares, if you use cherry tomatoes, do not cut them, use them whole. Cut the green vegetables in strips and the garlic into very small squares. Cut the mushrooms in not very wide slices.
  3. Heat a pan over medium heat, add the olive oil with the garlic until golden brown (be careful not to burn it).
  4. Add the mushrooms and sauté, then add the potatoes, and finally the rest of the ingredients.
  5. Add salt and pepper as you want and add the spices of your choice, I use parsley and cilantro.
  6. Enjoy this healthy and delicious dish!
