Start by boiling two pots of potatoes: one left as chunks and the other mashed with mayo to make dressing (this helps imitate the texture of the egg yolk).
Black olives (halved or quartered) imitate the texture of egg whites.
Black salt also called Kala Namak, imitates the taste and smell of eggs - it's a must for vegan cooking. Prepare to stink up your kitchen! ;)

Pretty good lookin! Mashing some of the potatoes and mixing with mayo (to simulate the yolks) is smart. The black salt sounds like a must! Yum.

Would you be able to exchange the black olives for green olives? Or maybe even something else entirely, just curious.
Oh yeah, green olives are totally do-able, if you're looking for a little extra tangy taste. I've heard all kinds of suggestions for replacing the egg whites, including tofu. Tofu would probably be a good one for texture, but I don't cook tofu (only eat it at restaurants) so I just did black olives for convenience and cuz I like them a lot. It looks weird but tastes good :)

vegan mayo? isnt mayo mostly eggs? first time i hear of that. probably something hard to get... also add some pickles :P
Vegan mayo is easy to find - it's oil based. There are a lot of specialty brands, but Hellman's makes their own. For the longest time it was called Carefully Crafted but they changed their name finally. I accidentally found it right before the name change.
i thouhgt egg was a crucial ingredience of mayo as otherwise the oil and the water would not mix.... they must have used a different emulsifier...
