Definitely the polvorones or mantecados Spanish, in Venezuela for many families of gastronomic tradition of European origin, are part of your Christmas table. However it is a dish that is for many, somewhat expensive. This recipe is very easy to make, in which butter is replaced by quality oil and nuts to succeed.
Ingredients for 30 units
Pastry flour
300 g
Extra virgin olive oil or corn (approximate amount)
100 ml
Icing sugar
125 g
Ground almonds
50 g
Ground hazelnut
50 g
Salt a pinch
Ground cinnamon to taste
Sesame seeds (sesame) to taste
Extra icing sugar to decorate
How to make polvorones of olive oil
Preheat the oven to 170ºC. Mix the pastry flour with ground almonds and hazelnuts in a bowl and spread on a baking sheet. Toast for about 15-20 minutes, stirring from time to time and watching very well not to burn.
Let cool outside the oven for a few minutes and bring to a large bowl. Add salt, cinnamon to taste and sugar glaze. Mix with rods to remove lumps and toss sesame seeds, if we use them. Add 100 ml of oil and start mixing. We probably need about 15-25 ml more.
We must be attentive about the point to the dough, it is the most complicated of the recipe. Once the flours have caught the oil, it is best to work with your hands. The dough should have a crumbly texture, moist but crumbling if we remove it with your fingers. It is similar to making a broken dough, we try to make it compact by pressing it.
Form a ball or block on a clean surface and stretch with a roller, tightening it well so that no cracks appear. Leave a thickness of 1 cm and cut the polvorones with a cookie cutter or a glass. Remove the excess dough and transfer each with a thin spatula to a baking sheet covered with greaseproof paper.
Continue until the dough is finished and bake for about 15 minutes, better if we turn the tray halfway through cooking. Allow to cool a little and move very carefully to a rack to cool completely. You can take the paper directly to the grid to avoid disasters. Sprinkle with plenty of icing sugar before serving.
They can be wrapped individually in tissue paper to preserve them better and to make gifts, although always with care.
