This is one of my current lunch favorites. I just throw it all in a bowl and viola! A delicious, healthy, raw vegan meal.
- 1/4 onion sliced thin
- Handful of grape tomatoes sliced in half or quarters
- 1/3 avocado diced
- 1 cucumber julienned (or cubed if you desire)
- A bit of red cabbage sliced thin (I love colorful meals!)
- Dash of curry
- Dash of cumin
- Generous amount of garlic powder
- Juice of one lime
- Generous portion of coconut aminos
- Sprout garnish on the side (I used broccoli sprouts)
Place the cucumber noodles on the bottom and load it up with the rest. Enjoy!!
