There's nothing better than a hearty breakfast of french toast and sausage. I came up with this recipe after figuring out a way to have sausage with every bite of french toast. It's a little off the beaten path, and a little spicy. What follows is a true culinary delight:
1 roll of breakfast sausage (I use Jimmy Dean all natural)
1/4 cup diced pickled (fresh is awesome too) of jalapeno peppers
1 cup diced Texas sweet onion
5 eggs, beaten
1 tbsp sugar
2 tbsp cinnamon
6 slices sourdough bread
red pepper flakes (optional)
Fry sausage, onions, and peppers in a skillet until sausage is done and onion is slightly grilled.
Drain and place on paper towels until dry, place in warm oven.
Mix eggs, sugar, and cinnamon and place in plate
Drizzle a small of oil into pan and heat frying pan over medium high heat until hot enough to fry
Dip bread into egg mixture until both sides are coated, being careful not to over soak.
Fry until golden brown on each side
Butter to taste
Place toast on plate and cover with sausage mixture. Add syrup and pepper flakes. Enjoy.
