Cookie-Muffins - my accidental, but yummy, recipe

in #food8 years ago

Hey guys!

Its been a while since I've posted as I've been out and about in the school holidays. Sorry about that! Today I want to share a recipe which I love, but was kind of an accident.

I set out to make cookies a while ago, but they turned out a bit different to what I wanted. However, they're really yummy, especially warm, and I'm glad I had the "accident".

Introducing my ...(drum roll).... Cookie muffins!!!!!!!!

They're super easy to make. they basically puff up while baking so they are more cakey. I love them when they are fresh out of the oven with some ice cream! Best of all, you can warm them up later if you need to.

So if you want to make these delicious treats, then here is the recipe!

You will need:
125g/5oz softened butter
1 beaten egg
A pinch of salt
50g/1 3/4oz brazil nuts (if wanted)
125g/4.5oz white and milk chocolate chopped (any chocolate you want really)
200g/7oz self raising flour
125g/4.5oz soft brown sugar

Here's what you've gotta do:
1.) preheat the oven to gas mark 5/190oc/375f
2.) Lightly grease or line some baking trays
3.) In a large bowl, mix together the butter and sugar until light and fluffy

4.) Gradually add the egg mixing well after each time

5.) Sieve the flour and salt into the mixture and mix well

6.) Chop the chocolate and nuts roughly, and stir in

7.) Place heaped teaspoons of mixture onto the baking trays. Don't put more than 6 teaspoons on each baking tray as the cookies will spread while cooking.

8.) Cook for about 10 to 12 mins and until golden brown

9.) Then just put them on the side to cool when cooked and serve how you want!

Hope you like them and find them as delicious as I do! Let me know how you get on if you try it and if you have any requests feel free to comment them! Thanks for reading bye x
