Today I want to share my go-to side salad for when I do not have time or will to make something fancier or just for when you have too many carrots. Tasty, healthy and as always, super easy!
For two side portions you need:
3 big carrots;
Salt and pepper;
1 tablespoon of seeds (my favorite is pumpkin, sesame and sunflower mix);
1 tablespoon of olive oil;
1 teaspoon of lemon juice;
I use potato peeler to get these fancy carrot strips. However, it is just aesthetics, you can grate them, cut in slices or maybe you fancy spiraled carrots. Add the remaining ingredients and mix well. Let it sit a bit before eating. It goes pretty much with any main dish. Enjoy!
