Do you love blueberries as much as I do? Because they are my second favorite berries after cherries. I also adore muffins, so, needless to say, this recipe is a total comfort food for me. Usual blueberry cupcakes are packed with sugar and calories. So, here I am with a healthy and nonetheless delicious recipe! The best thing about these muffins is that they do not interfere with your New Year's resolutions! They are super fast to make so you can make any day smell like Sunday. :)
You will need:
2 ripe bananas;
2 large eggs;
1 cup of plain yogurt;
4 tablespoons of honey;
160 g of rolled oats;
1,5 teaspoon of baking powder;
A big handful of blueberries;
Put bananas, eggs, yogurt and honey into a food processor (or a deep bowl if you use blender). Process until smooth. Add oats and baking powder and process some more until you have even batter. Add blueberries and mix with a spoon. Pour batter into a muffin tin or liners (fill 3/4 of the space because muffins will rise) and bake in 200 C oven for 15- 20 minutes.
I would say let them cool down on a tray but it would be hypocritical because I eat half of them straight from the tin, lol.
Some advice:
- Muffins come off nicely from silicone molds, though use parchment paper in metal ones.
- Switch blueberries for ½ cup of chocolate chips or some other berries if you like!
