My RECIPE for: Coconut Rice with Mango 🌴 [VEGAN, GLUTEN & SUGAR FREE]

Hi! Do you like mango sticky rice? I love coconut and mango and I created my version of this popular dish in Thailand.

It's vegan (dairy free), naturally gluten free and sugar free healthy meal 😊 

 

Coconut rice with mango is a perfect idea for hot breakfast or lunch, and served cold, for dessert.

Ingredients: 

  • 3/4 cup of white sticky rice (can soak it for a few hours before cooking) 
  • 2 cups of coconut milk (I used organic milk without sugar)
  • 4 dates (I used fresh ones)
  • vanilla stick 
  • a pinch of Himalayan salt 
  • 2 tablespoons coconut shrims 
  • a teaspoon of black sesame 
  • one ripe mango 

Preparation:   

Rinse the rice under water, then put in a pot and pour 1, 5 cups of coconut milk. Add salt and cut along the stick of vanilla, boil.  After a while reduce the gas on stove, add chopped dates and coconut shrimps. 

Cook for about 45 minutes. - 1 hour, stirring occasionally and adding water if necessary. 

Leave the rice for a few minutes under the cover, it has to have a sticky texture. 

At the same time, cut the mango into cubes.  

Put the hot rice into bowls, pour over coconut milk, sprinkle with black sesame seeds and decorate with mango.

This looks sooo good!! But careful when calling food sugar free. Although there isn't any granulated sugar in this dish, dates and mangos are really high in sugar. I am not saying it isn't healthy but for those that are looking to cut sugar out of their diets completely should think about making it without the fruit.
But It looks like a great post or pre workout meal :) And I love the photos!

Yes you are right. It is better to write that it does not contain added sugar or refined sugar.

I agree with @annemariemay! But I know you present absolutely let me say high-class healthy vegan creations. I think it is clear, or lets say it is a great step to start chancing and showing alternatives to "added sugar". Even a cucumber has sugar! So: no sugar added should be understand or seen like ( maple syrup, cane sugar and how they all call). We have soooooo unfortunately many recipes with added sugar, which we don´t need. I ´m starting to think about bringing some stones to roll, when I´m thinking about a list of ( Alternatives to added sugar :)) Thank you both for your inspiring comments. Love, mama

Rice and mango combination is very popular in India. In season we almost every day eat Aamras Chawal (Mango juice with Steamed Rice)
I liked the way you cut a mango. Which mango is this?

In Poland we only have imported mango, mainly from South America, I do not know what kind of mango.
But it's not as good as what I've eaten in California or in Australia and you eat in India.
