Ingredients
2.5 to 3 cups of all purpose flour/maida
1 cup of lukewarm water
2 tsp of dry yeast
¼ tsp of sugar or ¼ tsp of honey
2 tbsp of olive oil
½ tsp of salt
Olive oil for brushing
Flour, corn meal or semolina for sprinkling
4 to 5 tomatoes
2 to 3 garlic
2 tbsp of olive oil
2 tbsp of red wine (optional)
2 tsp of dried basil or 2 tbsp of fresh basil
1 tsp of dried oregano
Freshly crushed or ground black pepper
1 onion, sliced
1 capsicum or bell pepper, sliced
1 tomato (optional)
8-9 pitted green olives, sliced
8-9 pitted black olives, sliced
Mozzarella cheese, grated, as per your requirement
Fresh or dried herbs
Directions
Sprinkle some sugar in the lukewarm water
Add the yeast and stir it for some time. Let the mixture settle down in room temperature for 10 to 15 minutes till it becomes a little frothy.
Take a bowl, add one cup of flour, salt and olive oil in it and then add the frothy mixture of yeast.
Stir and then add one cup of flour
Stir again until the mixture becomes sticky
Add the last cup of flour and then continue to stir
Knead the dough into a very smooth and springy ball
Cover the dough loosely and keep it in a large bowl at room temperature for almost 2 hours
You will notice that the dough will double up
Blanch the tomatoes and then finely chop them
Heat oil. Fry the finely chopped garlic until golden
Add tomatoes and wine to the oil
Let them simmer for 4 to 5 minutes. Do not cover them
Add the herbs, pepper and salt to taste
Mix it well and then cook it again for another 3 to 4 minutes
Flatten the dough to the shape of a disk
Roll the dough on a floured surface
Grease and dust a pizza pan
Place the flattened dough on the same pan
Brush some olive oil on the pizza base
Spread the tomato sauce you prepared on the pizza
Top it up with veggies of your choice. Remember not to overdo it
Spread the grated mozzarella cheese
Bake the veg-pizza in a preheated oven for 10 to 15 minutes at 200 degrees Celsius
Serve the yummy and delicious pizzas hot
