Good day steemit community! Today I want to show you the recipe for making delicious jollof rice.
We start with the ingredient for cooking.
Below are the ingredients
Ingredients
2/3 cup oil
small onion (chopped)
5 cups rice
4 cups broth (stock, omieran)
2 cup parboiled blended stew base
3 tablespoons tomato paste
teaspoon each (curry, thyme, white pepper)
3 bay leaves
salt to taste
Seasoning cube 2-3 cubes
Sliced tomato and onion (to taste)
2 tablespoons butter
Note that the ingredients can be increased depending on the cup of rice you are cooking.
Direction on cooking
First of all, Place a pot on medium heat, heat up oil.
Add in chopped onion. Fry until slightly browned. Add in spices and bay leaf. Stir
Add in tomato paste. Stir fry. Cover and cook for 2-3 mins. Remember it must be on medium heat.
Next step is to Add in pepper mixture. Stir-Fry. Cover and cook 5 mins
Add in stock, seasoning cube and salt. Stir. Cover and simmer for 15 mins. Taste and adjust for seasoning.
Next, Stir in drained washed rice. Reduce heat to medium low (2-3 on marked cooker). Seal pot with foil then cover with lead.
Leave to cook for 30 mins. No need to stir or open. LET IT GO
Stir in butter, sliced tomatoes and onions. Increase heat to high (This is where the smokiness happen). Leave for 5-8 minutes or just until you can smell the burn. Turn off heat. Leave to rest covered for 10 minutes before serving.
How to fry plantain
Ingredients are;
Ripe Plantain
Vegetable
Salt
Before you fry the plantains
- Wash, peel and slice the plantain.
Place in a bowl and add a little salt. Toss the plantain to ensure that the salt is evenly distributed. - Pour a generous quantity of vegetable oil into a frying pan and allow to heat.
Frying patterns
- When the oil is heated, add a considerable quantity of the plantain slices to the oil, leaving enough room for the slices to fry evenly.
- When the underside of the slices starts to turn golden, flip the slices on their other side.
- Fry till a desired browning is achieved.
- Remove and place in a sieve to drain out the oil.
- Fry the next batch of the plantain slices following steps 1 through 4.
Note: you can decorate your jollof rice the way you like.
