Peanut Butter Cheesecake
Description
This delicious cheesecake is so decadently divine and rich that Mum won’t want to share!
How to Make
Grease base and sides of 28cm spring-form pan.
Using a food processer, process biscuits until fine; with motor running add melted butter; process until just combined. Press the biscuit mixture evenly over the base and sides. To achieve a neat crust, press the crumb mixture firmly with a straight-sided glass against the sides of the pan; refrigerate while preparing the filling.
Combine gelatine and water; stir until the gelatine dissolves; cool 5 minutes.
Beat cream cheese, NESTLÉ Sweetened Condensed Milk, peanut butter, vanilla bean paste and gelatine mixture in a medium bowl with an electric mixer until smooth. Add ¾ cup (190mL) thickened cream, reserve remaining cream to make ganache. Pour into pan. Refrigerate for 3 hours or until set.
Combine reserved thickened cream PLAISTOWE Premium Dark Chocolate in medium microwave safe bowl and microwave uncovered on MEDIUM (50%) for 1 minute; stir. Repeat process in 30 second intervals until melted and smooth. Pour over top of cheesecake and refrigerate for a further 20 minutes or until chocolate is firm.
