MAIZE CHAPATI (BREAD) & MUSTARD LEAVES VEGETABLE:
Maize bread one most famous Punjabi dish, needs no introduction. It is make by mustard leaves, accompanied with maize bread. The luscious green curry of mustered leaves tastes fabulous with maize bread & a dollop of butter.

MAIZE BREAD AND MUSTERED LEAVES CURRY:
A delicious and traditional dish of Pakistani province Punjab and it’s know in Punjab with name of Sarsoon ka Saag, Makhan and Makki ki rotti (Curry of mustered leaves, butter with maize bread ) . It mostly prepared in winter in province Punjab of Pakistan. It is healthy traditional dish people’s love to eaof musterede very much in Punjab Pakistan.

Maize Bread and Mustered Leaves Curry (Makki Ki Roti Sarson Ka Saag)
This rich & irresistible dish is easy to prepare. Major ingredients are mustard leaves & maize flour. Leaves of mustered are a little bitter, but when cooked with milder tasting spinach, ghee/butter & spices the taste is heavenly.

MUSTERED LEAVES CURRY INGREDIENTS:
2 small bundles of mustard leaves
1 bundle of spinach
1 or inch piece of ginger
6-7 cloves of garlic crushed
3 onion finely chopped
8-9 green chilies
2 pinch of asafetida
1/2 tea spoon cumin seeds
1 tea spoon coriander powder
1 tea spoon masala
1 tea spoon red chili powder
2 tea spoon maize flour
2 tea spoon ghee
Salt for taste
FOR MAKKI KI ROTI:
2 cups of maize flour (makki ki atta)
1 tsp of ajwain (optional)
Hot water as required
Salt to taste
METHOD:
- Good wash mustard & spinach leaves, remove leaves from stems.
- Cooked the spinach & mustered leaves in cooker for 4-5 vessels with a little salt.
- Mashed it with the hand blender.
- Maize flour add in mustered and spinach and mix it well.
- Heat butter in a pan, wait till it crackles, now add asafoetida .
- Add ginger, garlic, stir for few seconds.
- Add onions & cook till they become a little translucent, add green chilies & stir for
sometime. - Add red chili powder, coriander powder, spices & stir.
- Mix mustard & spinach mixture to this, salt & cook for 10-12 mints on low flame. You can add
water if required. - Garnish with a dollop of butter, curry of mustered is ready to serve.
For Maize Bread ( makki ki roti): - All the dry ingredients mix in a bowl.
- Prepare dough with hot water, knead few minutes.
- Make equal size ball by dough.
- Roll each ball into a circle approx. 5" in diameter (1/4" thick)
- Heat griddle & place bread roti very carefully on it.
- Cook from other side till you see red-brown marks & get that distinct aroma.
- Serve hot makki ki roti (Maize Bread) glazed with butter on top & piping hot sarson ka saag (Mustered leaves curry).
