Am a foodie, i love food. I normally get these great recipes, cook and feed my soul. Thats because this partuclar one is sooooo yummy. The "GRILLED CHICKEN SALAD"
INGREDIENTS:
For the chicken
A pair of boneless chicken breast (trimmed )
4 tablespoons plain yogurt
1 teaspoon chicken masala
Salt and pepper to taste
Chili flakes (optional )
METHOD
Marinate the chicken breasts with all the above ingredients and cover.
Let it sit for about 15 min.
Grill on BBQ charcoal stove or skillet with 2 table spoons of olive oil or in the oven grill mode; grill for 10 to 15 min each side depending on the thickness of the breasts.
Remove and set aside to rest before slicing
For the rest of the salad I used strawberries (halved ) , cherry tomatoes (halved ) grilled baby courgette (season with salt and pepper ) onion rings , drizzle dressing of your choice then toss and plate , place your sliced chicken breast on top and serve .
PS: I used ranch salad dressing for the lettuce , and olive oil , lemon , chia seeds , honey ,salt and pepper dressing for the rest of the salad ingredients
I always like to add Avocado, always tastes great!
