Ingredients:
- 1 cup (120 g) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup almond milk, unsweetened
- 1/2 cup (100 g) granulated sugar
- 1 tablespoon ground flax + 3 tablespoons warm water
- 1/4 cup oil
- 1 tsp vanilla extract
Cinnamon Streusel Topping:
- 1/3 cup (43 g) all-purpose flour
- 1/3 cup (65 g) brown sugar
- 1 1/2 tablespoons (22 g) vegan butter
- 2 teaspoons cinnamon
Glaze:
- 1/2 cup (57 g) powdered sugar
- 2 teaspoons almond milk, unsweetened
Directions:
- In a small bowl, mix together the ground flax and water to create flax egg. Let sit for 5 minutes.
- In a medium bowl, whisky together the flour, baking powder and salt.
- In a large bowl, add almond milk, sugar, oil, vanilla, and flax egg.
- Add the dry ingredients to the wet and stir until combined.
- Pour batter into a piping bag or ziplock bag.
- Grease the donut pan with an oil spray.
- Pipe batter into each donut cavity.
- In a small bowl, mix flour, brown sugar, butter and cinnamon together. Mix until it’s come together.
- Sprinkle the topping onto the donuts. Press streusel into the batter.
- Bake at 350 degrees F for 15-18 minutes.
- Let donuts cool in the pan for a few minutes before removing them to a wire rack to cool.
- In a small bowl, whisk together powdered sugar and almond milk.
- Drizzle over donuts.
