Say what? A healthy chocolate chip cookie? Vegan, paleo, gluten free and tastes like a million bucks?

But first, I'd like to take a moment to thank my young son for handing me 'Paleo Sweets' by Kelsey Ale and then miraculously opening up to the chocolate chip cookie page. Call it fate, destiny or whatever but all I know is that it is what's for dessert!
1.5 cups almond flour
2 tablespoons arrowroot flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons vanilla
1/3 cup maple syrup
1/4 cup coconut oil (or ghee)
1/3 cup chocolate chips (plus more it you prefer your cookies super choc-lickty)
Preheat your oven to 350 degrees. In a mixing bowl combine all ingredients and stir until completely combined. Divide the dough evenly and place your cookie balls on a baking sheet with parchment paper or stone (my preferred baking method) and bake for 10-15 minutes or until cookies are brown around the edges.
Enjoy your healthy, warm cookies with a glass of milk!
