Petit pois à la Francais 🇫🇷 Recipe & Photo Shoot

One of my favourite French dishes, really how can you go wrong with peas and bacon? My version is very light which I love. Some recipes call for cream but I find it takes away from the freshness around the whole dish.

Here’s what you’ll need: serves 4

5 shallots or 10 baby onions
50g /2oz of smoked streaky bacon, rind removed and cut into lardons or strips
25g/1oz unsalted butter
200ml/7 fl Oz water
1/4 teaspoon sugar
400g/14oz shelled fresh peas or frozen peas
2 baby cos lettuce, leaves separated
Salt and pepper to taste

Method:

Cook the onions and bacon on a low heat in a saucepan, soften the onions and bacon in the butter for 2-3 minutes without colouring.

Add the water, sugar and 3 pinched of salt and a pinch of black pepper and bring to the boil. Cover with a lid and reduce the heat to just below simmer. Cook for 15-20 minutes, until the onions are translucent, soft and melting but still have there texture.

Remove the lid and turn the heat to high and add the peas and lettuce leaves.

Stir, then cover again and cook for 1 minute or until the peas are tender. Taste and correct the seasoning if you feel it’s required.

Serve family style on the table as meal by itself or accompanied by a meat dish.
