This looks soooo yummy!!! We love to do at least one "salad night" during the week, to keep things light (and to prove to my kids that yes, they can and will eat it - lol). I think the taco bowls would go over really well with them - thanks for the great idea!
Also, chipotle hummus?! YUM! We love chipotle everything, and we love hummus... and I've been experimenting with adding different things, like roasted garlic, or caramelized onions, but why the heck didn't I think of chipotle?! LOL
