Ingredients
12 pcs eggs
60 g low fat milk
1 pcs onions
6 pcs cherry tomatoes
30 g spinach
1 tsp black pepper
Method
Preheat the oven to 350 degrees F and grease muffin pan with cooking spray.
Whisk the egg, milk and half of the pepper in a large bowl. Stir in the spinach (chopped), tomatoes (chopped) and onions (diced).
Pour the mixture evenly into the 12 muffin pan cups and bake for about 25 minutes or until the egg is fully cooked. Remove the muffin pan from the oven and allow to cool for about 5 minutes then use a knife to loosen the muffins from the cups.
Serve each muffin with diced avocado and crumbled feta cheese (optional).
