Awesome! My family loves sweet potatoes especially when I make a pie from scratch. I'll have to try making the quesadillas. I grew a few of the purple japanese sweet potatoes a buddy of mine gave me last year and they were quite good. A bit sweeter than the orange beulregards I also grew.
