Eggplant rolls with olives and feta

You may not like to eat Eggplant vegetable, but after knowing the benefits of it, you will definitely want to eat it. Eggplant will not only give benefits associated with it, but it will also good on your reducing weight.

Ingredients


  • 1 eggplant;
  • 8–10 pitted olives;
  • 4–5 branches of parsley or dill;
  • 100 g feta cheese;
  • 2 tablespoons of vegetable oil;
  • salt and pepper to taste.

Cooking



Cut the eggplant into longitudinal slices. Grind olives and greens. Crumble the cheese.

Heat the pan over medium heat. Grease the eggplant and fry for 2–4 minutes on each side. Put on a plate and cool.

Mix cheese with olives and herbs. Salt and pepper. Put the filling on each slice and carefully wrap.
