Venezuelan coasts and as I live in the east, it is a typical dish that can be enjoyed in any corner of my city. A good Venezuelan soup can be prepared with any seafood of your taste, such as octopus, squid, mussels, shrimp, prawns, oysters, and much more. It is basically a soup / rice stew with very soft and healthy seafood, seasoned with garlic, tomato and sherry.
Ingredients
- Rice
- Any fresh shellfish in its shell
- Shrimp (preferably unpeeled)
- Clean squids
- Crab
- Fish soup
- Medium red peppers, chopped
- Large onion, chopped
- Peeled garlic head
- Mature tomatoes
- Salt to taste
- Pepper to taste
- Chopped parsley for adornment
- Olive oil
- Sherry at ease (optional)
Preparation
Preparation: 20mins> Cooking time: 35mins> Ready in: 55mins
- If they do not have fish stock or seafood, in a large pot put 3lts of water to boil.
- Clean the shrimp well, and store the heads and shells.
- Place the shells and crabs in the boiling water for 15 minutes or until they turn pink, both water and seafood. Strain the broth, reserving the water, discarding the shells and keeping the crab.
- Place the vegetables (except the parsley) in the blender with a little broth. Blend well.
- Heat the olive oil in a large pot and sauté the rice. Once it took transparent color, place the vegetable. Add the broth that we prepare, stirring from time to time.
- Once the 10 minutes have passed, add the squid.
- At 15 minutes add the peeled shrimp and shellfish with their peel.
- Cook until the rice is ready (20-25 minutes).
- Finally, add the crab already cooked to take temperature.
- Serve in a deep dish and garnish with fresh parsley.
advice
It is suggested to place a squeeze of sherry and olive oil to each dish to finish it. Let stand for 20 minutes and the result is much better than if you eat immediately.
For a perfect pairing a white wine is recommended. The success this preparation is as much in the sofrito as in the fish broth. Seafood has the reputation of being aphrodisiac, so this soup is graciously called "rises dead" or "breaks mattress". Unfortunately my husband is allergic to these foods and therefore I can not say if they really break the mattress hahaha.
