I have two questions, however:
(1) You said you "tighten the jars "finger tight so that air can still escape from them when they are in the hot water bath. Once all the jars are in, I make sure that they are covered by at least one inch of boiling water." Does "finger tight" mean as tight as you can manage with your bare hands? But isn't this a contradiction? Doesn't water leak in? Do you retighten them when they leave the bath?"
(2) I can't find tomatillos here in Taiwan. What sort of tomatoes are acceptable substitutes? Is it purely a matter of personal taste, or does texture enter into it?

(1) - By just using the fingertips to tighten the jar. Air escapes but water does not leak in, and then I tighten them all the way later.

(2) - Any tomatoes should do. They just create the base of the salsa.
