This is the greatest vegan creation in history! If you havent tried it please please do. It also can be put on bread and had as a tuna sammy!
SANDWICH
1# chickpeas, rinsed and drained
1/4 cup roasted unsalted sunflower seeds (optional)
3 Tbsp vegan mayo (sub tahini for a more earthy, nutty flavor)
1/2 tsp dijon or spicy mustard (if using tahini instead of mayo, use 1/4 tsp)
1 Tbsp maple syrup (or sub agave or honey if not vegan)also optional
1/4 cup chopped red onion
2 Tbsp fresh (or 1 Tbsp dried) cilantro finely chopped
1/4 cup small diced celery
1/4 cup smal diced carrots
1 whole Avocado scooped out and mashed.
healthy pinch each pink himalayan salt and pepper (to taste)
Add chickpeas to a mixing bowl and lightly mash with a fork for texture. Then add sunflower seeds, mayo, mustard, maple syrup, red onion, cilantro, carrots, celery,salt, avocado and pepper and mix with a spoon. Taste and adjust seasonings as needed.
I love chickpea tuna! I have a similar recipe on my page. Sometimes I like use avocado instead of the mayo, it help make it a bit healthier even! 🥑💪
Yes I reduce the ammount of mayo and add more avocado. Its super rich and creamy I love it. My life changed after chick pea tuna lol
