Spinach & Ricotta Cheese Rolls - melted cheese wrapped in flaky, buttery pastry. Delicious and SO easy to make!

Hello fellow Steemians!

I'm back with another recipe and can I just say that I was SO excited to share this one with you guys. Anyone who's been reading my posts should know that I'm not a fan of overly complex cooking - not because I can't appreciate it but because I'm just not that skilled myself and also I don't have much time during the week to cook. Often I post quite simple recipes but using quality ingredients that really pack a punch. 

Today's recipe definitely ticks those boxes. I made these for the first time and I had them on the table in about 45 minutes - no joke and they looked beautiful (if I do say so myself hehe). I honestly think anything with pastry will look great because who can resist the golden, flaky pastry that makes your house smell like a buttery bakery? Haha, sorry I am still drooling now as I write this but just take a look...

Not sure what it is, but here in Australia we love our "sausage rolls". At any sporting event whether it be football, tennis, swimming or whatever I guarantee you'll always find a canteen selling sausage rolls and meat pies. They're easy to eat, delicious and let you focus on the game whilst enjoying a tasty treat! I'm definitely looking to share my recipe for Aussie meat pies shortly as well so keep an eye out :) 

Anyway, let's get onto the recipe!

1. Assemble the ingredients, I actually had all of this at home already except for the ricotta which was easy enough to buy! Any supermarket will have this.

2. Thaw and then wring out the spinach to remove excess liquid

3. Chuck all the filling ingredients into a mixing bowl and combine! (It's a GIF, let it load hehe) - also sorry my arm was casting a shadow, I didn't realise until after =(

4. Lay out the pastry and spread the mixture in the centre

5. Roll them up 

6. Cut them into quarters (or whatever size you like) and then brush with egg and sprinkle with sesame seeds.

7. 20-25 mins in the oven and .... *drum roll*

(note that it actually made 24 but we had about 8 before they had even cooled down...)


These went so quickly, I had to physically put them away in a box and walk into a different room otherwise I am sure I would have eaten nearly all of them!! They were so addictive, I think it was the combination of flaky, buttery pastry and the insides which were cheesy, gooey, but not too rich as we had just used ricotta which is a fairly light cheese with a bit of parmesan and tasty (which is a type we sell in Australia similar to cheddar). Not to mention it had spinach so it was quite a 'light' tasting pastry treat. 

I highly recommend you try these. I'm actually planning on doing a proper "Aussie" sausage roll recipe soon so keep an eye out!

They're mouth-watering! It encourages one to learn baking. There is bread like this that you can buy from a shop but based on the ingredients, I'm sure these ones taste better. I can't wait to try one.

Thank you for your very kind comment! I am not 100% sure I would call this baking yet because I didn't do much other than put it in the oven but I'd love to be able to make my own pastry some day.

I'm interested to know which bread it is you can buy that's like this? Or you mean there are stores that also sell these types of "rolls"?

Yes it will but making it with meat requires a couple small changes like adding breadcrumbs (to keep it moist) and also the addition of some cooked onions, garlic, celery...if you can wait I’ll actually be posting a meat sausage roll soon 😋😋

Oh my God! I love that mixture of flavors and is very easy to make!

I know right?? Cannot go wrong with spinach and ricotta. I was actually tempted to make the Greek favourite of spanakopita as it uses sort of similar ingredients (minus the tasty cheese and parmesan) wrapped in filo pastry instead, but this looked so easy and I had everything already at home. Give it a go! :)
