Recipe: Zucchini-Olive-Tomato-Sauce with whole grain pasta

Hi people! ☀ Today, I'll show you how to make my favorite pasta sauce: Tomato sauce with zucchini and olives. This recipe serves about 2 people and is so easy! I hope you enjoy :)

In our apartment we have a small balcony, in which we try to grow as many vegetable plants as we can. Currently, we have red pepper, spinach, strawberries, some herbs and lots of tomatoes, as you can see in the picture below. We love to use our self grown vegetables to cook, which feels really good! I'd love to have my own garden some time and grow lots of delicious vegetables and fruits! By the way, in the background of the second picture, you can see our beloved mannequin with a monkey mask on standing on the balcony;)

Ingredients

  • 1 zucchini, cut into cubes
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • ½ cup of small fresh tomatoes
  • ½ cup of black olives, cut in half
  • 1 can chopped tomatoes
  • olive oil
  • salt
  • pepper
  • fresh basil
  • oregano
  • 250 grams of pasta, I used whole grain spaghettis

Method


First, you heat a frying pan over medium heat and add the olive oil. Then, add the zucchini and fry it until it's a bit brown. Add the onions and garlic and cook until the onions are done.

Add the canned tomatoes and a pinch of salt and let it cook for about 20 minutes until a big part of the water has boiled away. Stir the sauce once in a while. Meanwhile, cook the pasta following packet directions.

Now add the fresh tomatoes, olives and additional seasoning, such as salt, pepper, chopped fresh basil and oregano. Stir and let it cook for another 5 minutes. Now you're ready to serve!

Add the sauce to the pasta and garnish it with some fresh basil leaves. Done :)

I love Italian food, it is one of my favorites! It is so easy to vary the tastes by adding or replacing some vegetables and herbs. I like adding eggplant or green pepper to the sauce. Varying the pasta is also a lot of fun, I like to use rice, lentil and chickpea pasta, which makes the taste of the dish even more interesting and exciting.
