Chocolate is the number one sweet food in the world, and if you can mix it with peanut butter than you have yourself a very good snack. However, being a vegan/plantbasedjunkie we people...lol.. Tend to get a bad rap and often times get made fun of because we cant eat the same foods as everybody else. For example, When I go to my families gathering, they usually have cakes, cookies, and pastries. As I sit there and deny all of these foods, my family members will stand there eating the cake real slow and making faces as if they are being extremely aroused by the goodness of what they are indulging in. Sometimes they point and laugh "ha ha ha it sucks to be vegan look at what your missing out on"... Well today, I have got really good news for those people. Here is a recipe to make these peanut butter stuffed epically delicious cookies that happen to be 100 percent vegan!.. try these cookies out an take them to your next family gathering. Next time someone shows the over indulged slow motion face; you can do it back to them with conviction, but make sure you have a glass of almond milk handy.
Ingredients:
1 package of oreo cookies
1 jar of crunchy peanut butter ( you can use creamy too just make sure the real peanut butter you use is real; its the one that looks seperated while it sits in the jar. The other peanut butters like Jiffy use trans fat to keep the peanut butter together)
1 twelve oz package of Ghirardelli semi-sweet chocolate chips

First: you want to seperate each cookie from eachother, but try to keep as much cream on one side of the cookie, and the other should have none. Set the one with no cream in a sandwhich bag for later. Set the cream half to the side. Seperate about 20 cookies.
Second: scoop a table spoon of peanut butter from the jar and place it on one half of the oreo with cream and then place another cream half on top of the peanut butter. You will be using two cream halfs to make one sandwhich.
Third: melt the Ghirardelli semi-sweet chocolate chips and make sure you continue to stir because they can burn. Once its completely melted turn off the chocolate and allow to sit for about a minute just so it cools down alittle bit , but not to much. Im just trying to prevent you from burning your fingers like i did twice.. lol..
Fourth: place a peanut butter stuffed cookie that u made into the melted chocolate and make sure it gets evenly coated. I used a fork to get the cookies out. Place the chocolate covered oreo on wax paper. Continue to do all of the cookies the same way.
Fifth: remember when you placed the non creamed half oreo in a bag and now u have like 10 of them or so? Smashed all of them now before they get out of the bag.. smash them up. make them into little cookie crumbles of goodness.
Finally: sprinkle the cookie crumble on the top of each cookie, and then place them in the fridge for 20-30 minutes just until the chocolate hardens. Enjoy!!
