Sweet potatoes are super healthy and appetizing.
What I love about them besides the taste is that they can be prepared in many different ways. They can be a main dish, side dish, snack, or even dessert.
This is one of my favourite recipes, which is very simple, quick and super delicious.
Recipe:
Boil the sweet potato with skin until it becomes soft (approx. 20-30 min). Take it out from the water, cut it in two haves and let it cool down a little bit. In the mean time, chop one tomato and rinse 1/2 can of beans. When the sweet potato is not too hot anymore, scoop it out from the skin, mash it in a bowl and mix it with the beans and tomatoes. Add some crashed pepper, too. Fill the sweet potato skin with the mixture and top it with some fresh green onion.
Serve it over leafy greens.
