Overnight oats are super quick and easy to make.
Simply put 1 cup of oats into a bowl and pour 1 1/2 plant-based milk on the top. Add 1/2 tbsp cacao powder and sweeten it with your favourite sweetener (I used liquid stevia and date paste at this time). Mix everything together and let it soak for at least 2 hours, but I prefer soaking them overnight. I always prepare it in the evening and eat in the morning.
I topped it with fresh strawberry, pineapple, kiwi, raspberry and puffed amaranth. You can add any kind of fruits and seeds you like. The variations are endless.

Looks really yummy. I envy you your tropical fruits. Here in Northern Europe it's difficult at this time of the year. Thank God for apples. :)
Ohh I kmow how it is in Europe during winter... I'm so glad I have lots of juicy and tasty tropical fruits here in Mexico. However, sometimes I miss apples, because I eat a lot of them in Hungary, but they don't taste good here and they are very expensive, too.
I love apples. But tropical fruit and sun the whole day beat apples and cloudy skies. :)
