I really like Thai food, especially currys, and I wanted to cook it but I realized that I had no curry powder at home, so I came up with a super simple meal, which became so delicious, that my roommate asked me to cook another batch tomorrow again :D
This recipe is very quick and simple, yet healthy and delicious. Just like most of my recipes.
Recipe
Ingredients:
- 4 big carrots
- 1 medium sweet potato
- 1 chayote (you can substitute it with pumpkin or squash)
- 1 white onion
- 1 poblano pepper
- 3 celery stalks
- 1 1/2 cup coconut milk
- 3 tbsp liquid aminos (or soy sauce)
- 1 tbsp agave
Cut all the veggies into cubes. First steam the carrot and onion under lid with 1/4 cup water. When it's a little bit tender but still crunchy (approx 10 minutes), add all the other veggies and steam them under lid for another 15 minutes. Add the coconut milk, liquid aminos and agave, stir it a couple of times and cook for another 5 minutes.
The best way to eat it is after waiting 15-20 minutes after turning off the heat, so the flavours have more time to match. Serve it over brown rice and enjoy :)

I am a fan of curry, as well! This looks like a great way to get some of the similar flavors in a pinch. :) You are the queen of simple, and I mean that in the best way possible! Not everyone wants to spend a lot of time in the kitchen, so I love that you share easy ways to get in a healthy meal.
